How to make authentic Masala Chai, as they do in India using St Fiacres Mulled Spice.

Authentic Masala Chai, or spiced tea using St Fiacres Mulled Spice. Vegan and sugar-free. Perfect for winter.
INGREDIENTS:
- 1-2 cups of water.
- 2-3 slices of ginger skin off.
- 1-2 tablespoons loose leaf black tea or 1-2 teabags. This can vary depending on taste.
- 1 cup of milk of your choice – whole dairy, almond, soy, cashew,
- St Fiacres Mulled Spice pack.
- Honey or Maple syrup may be added depending on your desired sweetness.
- Cinnamon Stick, Star Anise for serving.
METHOD:
- Place in a small pot, water, ginger, black tea and St Fiacres Spice Pack.
- Bring to boil.
- Turn off heat and let steep for 10 minutes, or for several hours. The longer, the more flavour.
- Add milk (½ water: ½ milk). You can make this richer and thicker by using more milk and less water.
- Bring to a simmer once more, turn off the heat.
- Sweeten, taste, strain into a glass.
You can make a big batch of Masala Chai without the milk and refrigerate for up to 4 days and heat up with milk and sweeten when ready to serve.
