Kohlrabi Slaw

Kohlrabi Slaw using St Fiacres Sweet Tomato or Sweet Zucchini Relish.

Serves: 4


INGREDIENTS:

  • 1 cup chopped cabbage
  • 2 kohlrabi bulbs, peeled and grated
  • 1 stalk celery, sliced thin
  • 1 carrot, sliced thin
  • 1 tablespoon onion finely chopped
  • ¼ cup mayonnaise
  • 2 ½ tablespoon St Fiacres Farm: Sweet Tomato Relish or Sweet Zucchini Relish
  • 2 ¼ teaspoon vinegar
  • Salt & pepper to taste.


METHOD:

  1. Toss the cabbage, kohlrabi, celery, carrot and onion together in a large bowl.
  2. Whisk either relish with vinegar and seasoning in a separate bowl until smooth.
  3. Pour over the cabbage mixture and stir to coat evenly.
  4. Chill in refrigerator 1 hour before serving.
